Mix for making steamed cake

Steamed Cake allows for a wide range of applications, among others for cake shells, eclairs, puffs, straws, peas and Vienna donuts, shortening the time of dough preparation and eliminating any risks. Products from Lesaffre Steamed Cake are: light, dry and have a straw color. The advantages of this mix include, among others, low fat absorption (in fried products) and low weight loss during heat treatment.

Method:

Vienna donuts

Mix all ingredients at rapid speed until a uniform consistency is obtained. Squeeze the dough onto paper and fry in fat heated to 180°C for 4 minutes on one side, 4 minutes on the other, then turn again and fry another minute.

Peas, Straws

Mix all ingredients at rapid speed until a uniform consistency is obtained. Then squeeze the desired shapes onto a tray lined with paper or thinly greased. You can sprinkle with sugar, coarse salt or other spices. Bake without water condensation at 230°C for 12 minutes. After this time, open the flue and bake (dry) for 5 minutes.

Eclairs, Puffs

Mix all ingredients at rapid speed until a uniform consistency is obtained. Then squeeze on a baking tray lined with paper or thinly greased and bake without water condensation at 230°C for 20 min. After this time, open the flue and bake (dry) for 10 minutes. Further processing according to the guidelines of the Lesaffre Polska technologist or own technology.

Polish Carpathian Mountain cream cake

Mix all ingredients at rapid speed until a uniform consistency is obtained. Spread 800 g of dough onto a thinly greased baking tray, size 60x40 cm and bake without water condensation at 230°C for 20 min. After this time, open the flue and bake (dry) for 10 minutes. After cooling, spread with pudding cream, prepared according to the recipe from the next column.

Method:

Mix Best Cream with water at medium or high speed for about 4 minutes. Combine with whipped cream by adding it in portions and stir at slow speed to obtain a uniform mass. The amount of cream and water can be freely configured.
