*sesame, pumpkin, sunflower, linseed, millet 240 g each. Roast the grains in the oven for 5 minutes at 230°C

Method:

  • kneading: spiral mixer 3 minutes at the first speed +/- 3 at the second
  • dough temperature: 26ºC
  • initial fermentation: 45 min at room temperature
  • dividing: 500 g chunks
  • relaxation: 15 min at room temperature
  • forming: round / elongated / triangular
  • proofing: 45 min at 35ºC
  • cutting
  • baking: 35 min 240ºC
