Blend to make American Pizza

The key to success in the preparation of American pizza in a pan, captivating in terms of taste and aroma. American pizza in a pan is becoming more and more popular, also in Poland there are lots of amateurs of this fluffy dough. American Pizza Star'Bake Bland contains all the essential ingredients needed for optimal fermentation, improved dough and great taste. The product does not contain those ingredients (e.g. flour), which are available locally.

American Pizza

Ingredients:
1 sachet of Star'Bake Blend for 20 pizza bottoms weighing 400 g each
Flour 5,000 g 100%
Water* 2,700 g 54%
Vegetable oil 100 g 2%
Star'Bake Blend (1 sachet) 200 g 4%
TOTAL DOUGH WEIGHT 8,000 g

Preparation time:
118 minutes

Method:
Mix dry ingredients, i.e. flour and Star'Bake blend. Add water and oil. Knead until the dough is fully developed.**
Spiral kneader: 4 min at the 1st speed + 2 min at the 2nd speed
Low-speed kneader: 5 min at the 1st speed + 3 min at the 2nd speed

Dough temperature = 27 ° C - 28°C.

Relaxation:
5 min at room temperature (under cover).

Division:
Divide the dough into chunks of 400 g (roughly) and round them. Cover and leave to relax for 5 minutes at room temperature. Roll out into pancakes 2.5 mm thick and 30 cm in diameter. Grease a 30 cm pan with 40 g of oil. Place the dough in the pan.

Fermentation:
90 min at 30°C (covered, if the dough is kept in an open room).

Decorating

Baking***
7-12 min at 250°C.
